A new skill I discovered during this quarantine is that I’m actually a pretty good baker. Chauncey is an amazing baker so I usually leave all baking to him (and his little helper Mckenna of course). I decided to give it a try and I have two recipes to share with you below. They are not healthy, vegan, gluten free or dairy free. Yes you read that right! So therefore they are delicious! Kidding.... kind of. We found both of these recipes on Pinterest and I will share the original links for the recipes below.
Banana Bread (Click HERE for original link)
I bake this a lot! Usually a few times a month, as Mckenna really loves this one. The craziest ingredient is definitely the mayo, but it makes it so moist, don’t skip using it! You can obviously substitute a lot of the ingredients below to make it vegan or gluten free. A word of warning, I did try it with coconut flour to make it gluten free once and that stuff might make it gluten free but it can also make it very dry, so up the “wet” ingredients.
What you will need:
3 ripe bananas
½ cup of Mayonnaise
1 egg
1 ½ cup of flour
1 teaspoon baking soda
½ teaspoon salt (pink Himalayan is best)
¾ cup of brown sugar
¼ cup of ground bran (optional)
½ cup chocolate chips
Steps:
1) Preheat oven to 350F
2) Mash the bananas and mix with the mayo and 1 egg
3) Mix all the dry ingredients in a separate bowl
4) Fold the wet and dry ingredients together until they are a thick batter
5) Spray a cooking tin (I use a 9x5) and pour in the batter
6) Cook for 1 hour
Martha Stewart's Chocolate Chip Cookies (click HERE for original link)
I will not take credit for finding this one. Chauncey made this recipe several times and honestly they are the best chocolate chip cookies I have ever had! I tried making it, with a little help from Chauncey and they turned out great. The key to this one is you have to beat the butter and sugar together to make a whip consistency.
What you will need:
2 ¼ cup flour
1 teaspoon salt
½ teaspoon baking soda
1 cup unsalted butter softened (we used salted and it was fine)
1 cup brown sugar
½ cup sugar (granulated)
2 eggs
2 teaspoons vanilla extract
3 cups of chocolate chips (we dialed this back to 2 cups but 3 was great too!)
Steps:
1) Preheat oven to 350F
2) Mix flour, sale, baking soda and set aside
3) Put butter and sugars in a bowl and mix on medium speed until fluffy (2 mins), reduce speed to low, add eggs and vanilla (1 min).
4) Mix in flour mixture and chocolate chips, blend well.
5) Using a cookie scoop is ideal (2 tablespoons) of dough on to baking sheets lined with parchment. Space 2 inches apart.
6) Bake for 12 minutes.
